Halloween Jack-o-Lantern Cheese Ball

2 cups shredded cheddar cheese
1/4 cup solid-pack pumpkin
1/4 cup pineapple preserves
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 large pretzel rod, broken in half
4-ounces cream cheese, softened
Dark rye bread
Red pepper
Black olive slices
Parsley sprigs
Assorted crackers

Instructions

1. Beat cheeses, pumpkin, pineapple preserves and spices in a medium bowl until smooth.
2. Cover and refrigerate 2 to 3 hours until the cheese mixture is firm enough to shape.
3. Place cheese on round Halloween serving plate and mold with your fingers until it is pumpkin shaped.
4. Using a small knife, score vertical lines down the sides of the “pumpkin?
5. Place pretzel rod in top for stem.
6. Cut bread into large triangles to form the eyes, cut red pepper into a triangle for the nose and cut olives in half to make the mouth. Surround your pumpkin with parsley.
7. Serve with assorted crackers

Serves 8-10 people
