Southern Pecan Pie

This delicious pecan pie recipe is adapted from Bill Neal, “Biscuits, Spoonbread, and Sweet Potato Pie”. (See carousel below to purchase cookbook).

Southern Pecan Pie

5 tablespoons butter

1 cup lightly packed light brown sugar

1/2 cup white sugar

2 tablespoons all-purpose flour

2/3 teaspoon salt

4 eggs

1 ¼ cups pecan halves

2 teaspoons pure vanilla extract

1 unbaked pie crust (Get recipe here)

Whipped cream or vanilla ice cream (Get whipped cream recipe here)

Directions

  1. Preheat oven to 450 degrees.
  2. Beat the butter until light and add the sugars slowly.
  3. Beat in flour and salt.
  4. Beat eggs in separate bowl; just enough to make them smooth.
  5. Stir eggs into the butter mixture, add pecan halves and vanilla.
  6. Pour filling into prepared pie crust and place in the lower part of the preheated oven.
  7. Reduce heat to 325 degrees and bake until set in the middle, about 40 minutes
  8. Cool and garnish with whipped cream or vanilla ice cream.

Yield: Serves 8
